O an\u00fancio, realizado nesta segunda-feira, 13, no Rio de Janeiro, refor\u00e7a a consist\u00eancia e excel\u00eancia do projeto assinado pelo chef franco-americano Jean-Georges Vongerichten no Brasil, agora potencializado por uma nova fase ap\u00f3s a recente renova\u00e7\u00e3o do espa\u00e7o.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A conquista chega em um momento emblem\u00e1tico para o restaurante, que passou, no \u00faltimo ano, por uma transforma\u00e7\u00e3o completa em sua ambienta\u00e7\u00e3o. O projeto assinado pelo arquiteto Herbert Holdefer, do est\u00fadio 134, trouxe uma nova atmosfera ao sal\u00e3o, marcada pela integra\u00e7\u00e3o com os jardins do Parque Burle Marx, uso de cores tropicais, materiais brasileiros e maior presen\u00e7a de luz natural. No Brasil, sua proposta ganhou sotaque local e de l\u00e1 para c\u00e1, o estabelecimento manteve uma experi\u00eancia gastron\u00f4mica \u00edmpar em S\u00e3o Paulo, uma fus\u00e3o de t\u00e9cnicas francesas refinadas, com influ\u00eancias asi\u00e1ticas e ingredientes brasileiros. \u00c0 frente da cozinha, o chef Felipe Macambyra mant\u00e9m a identidade da casa, com menus que valorizam sazonalidade, precis\u00e3o t\u00e9cnica e criatividade.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O menu-degusta\u00e7\u00e3o \u00e9 o cora\u00e7\u00e3o da experi\u00eancia. Entre as del\u00edcias, destacam-se iguarias como o\u00a0<strong>tartar de linguado<\/strong>, com folha de shis\u00f4, pepino e semente de gergelim;\u00a0<strong>Polvo e Romesco<\/strong>, com molho romesco, coleslaw apimentada e castanha-de-caju; e o\u00a0<strong>Robalo com especiarias<\/strong>, que \u00e9 servido com jus agridoce e legumes da esta\u00e7\u00e3o . Nos principais, o\u00a0<strong>Magret de Pato grelhado<\/strong>, elaborado com especiarias, infus\u00e3o de coco e capim-lim\u00e3o, pimenta dedo-de-mo\u00e7a e repolho verde, apresenta um equil\u00edbrio de sabores que encanta os sentidos e o\u00a0<strong>Cordeiro ao pesto,\u00a0<\/strong>com crosta de salsa verde de hortel\u00e3 e nir\u00e1 grelhado.
